What to feed a vegetarian kid for lunch

With a friendly nod to Maggie Mason, and for those who have no idea what to serve a vegetarian kid for lunch.

Monday

  • sprouts! sandwich: honey whole wheat bread, cream cheese, alfalfa and broccoli sprouts, thinly sliced radishes and tomatoes; a spoonful of guacamole
  • Carrot and red pepper sticks with dilly dip (dash dill weed, dash garlic granules, dash onion powder, 1 cup sour cream or soft tofu plus a squeeze of lemon juice)
  • Sliced pears
  • a handful of salted sunflower seeds
  • fresh mint leaves floating in a kiddie cup of filtered ice water (what can I say, they like mint…)

Tuesday

  • whole wheat burrito-sized tortilla stuffed with vegetarian refried beans and shredded cheddar cheese; pan-fried until cheese gets melty.
  • fresh tomato salsa, avocado, and low fat sour cream on the side
  • unsweetened organic applesauce sprinkled with cinnamon-raw sugar blend
  • vanilla soy milk

Wednesday

  • Good old P&J: natural peanut butter, fruity jam on whole wheat
  • orange and pear slices
  • a few pretzel twists
  • vanilla soy milk

Thursday

  • Tofu cubes tossed with *seasoning and warmed in a cast-iron skillet
  • Steamed broccoli drizzled with flax oil or margarine
  • Dried apricots, cranberries and raisins and honey sesame sticks
  • Mango juice

*I used garlic granules, onion powder, parsley, basil and a dash of sea salt and fresh ground black pepper

Friday

  • Homemade vegetarian pepperoni pita pizzas. I normally use shredded cheese but am experimenting with a nutritional yeast cheesy spread that I’ll post when I get it right.
  • Salad of chopped romaine, tomato, carrots, peppers, olives and pumpkin seeds tossed with flax/olive oil blend and lemon juice
  • Whole fruit popsicles
  • Filtered ice water

Saturday

  • Homemade spaghetti-os. You can buy dried pasta rings reminiscent of the mushy canned variety but can be cooked al dente. Served with tomato-red lentil sauce.
  • Wilted chopped (almost minced)spinach, tossed with olive oil, shallot, a dash of sea salt and pepper
  • Organic yogurt topped with wheat germ, milled flax seed and multicolored dinosaur-shaped candy sprinkles
  • Apple cider

Sunday

  • Dilled crushed chic pea and veganaise salad sandwiches (like an egg or chicken salad) on rye bread
  • Mandarin oranges, chopped romaine, red pepper slices, and almond slivers tossed with a little mandarin juice, apple cider vinegar, flax oil and sea salt and pepper.
  • Organic dried fruit strips (Fruit-a-bu!)
  • Chocolate soy milk
